  • Cauliflower
  • Spinach
  • Cheese (optional/dairy free)
  • Wholewheat flour
  • Olive Oil
  • Water
  • Cumin seeds
  • Pepper
  • Turmeric 
  • Garlic
 Ingredients
  • 6-7 florets of steamed cauliflower 
  • 1/2 cup of spinach finely chopped
  • 1/2 cup grated Cheese (plant-based)
  • 2 cloves of garlic grated (stuffing)
  • 1 tbsp olive oil (for the stuffing)
  • 1/2 tsp cumin seeds
  • pinch of black pepper
  • pinch of turmeric
  • 2 cups of wholewheat (chapatti flour)
  • 1 tbsp olive oil (for the paratha)
  • 1-2 tbsp olive oil for frying the paratha 
  • Water
    Method
    • In a saucepan, heat up the olive oil (for the stuffing), add the cumin seeds. Wait until they crackle. 

    • Add in the garlic and saute for 1-2 minutes
    • Mash the steam cauliflower and add it into the saucepan along with the spinach, turmeric and pepper. Cook for  2-3 mins until the cauliflower is soft 
    • Take the pan off the heat and allow the mixture too down slightly, add in grated cheese.
    • Make small balls (size of a golf ball) and place onto a plate. Place the plate into the fridge whilst you make the flatbread. 
    • Add the wholewheat flour, olive oil and water in a boil and knead into a dough. Add more or less water as required. The dough should be soft. 
    • Make 4-6 balls out of the dough. Roll the dough out on a flat surface until it reaches a diameter of approximately 15cm. 
    • Place one of the stuffing balls in the middle and using the sides of the flatbread cover the ball. Once covered, remove the excess dough at the top. 
    • Roll the stuffed paratha out until its approx 2-3mm thick. Place on a heated non-stick pan and cook for 1 minute (until bubbles appear)
    • Add some olive oil onto each side and cook the other side until slightly brown. 
    • Cut into manageable pieces easy for your little one to handle
