Quick & Easy Veggie loaded Shephard's Pie

Try this heart-warming Shephard's Pie, perfect for those cold winter evenings. This is great for baby and toddler dinners. 

Shephard's pie

  • Onion
  • Garlic
  • Mixed Veggies
  • 1 Portion of MVB's Creamy Red Lentil & Hidden Veggie Sauce 
  • Potato 
  • Cheese (vegan)
  • Olive oil
  • Oat Milk
  • Red Lentils
  • 1 small Onion finely chopped
  • 2 cloves Garlic minced
  • 1-2 bags of frozen Mixed Veggies- or veggies of your choice- finely chopped
  • 1 Portion of My Veggie Bubba's Creamy Red Lentil & Hidden Veggie Sauce 
  • 1-2 Potatoes 
  • Cheese (vegan)
  • Olive oil
  • Oat Milk
  • 1 tsp Mixed herbs
  • Cottage cheese/ plant-based cream cheese (optional)
  • 3 tbsps of washed Red lentils cooked
    • Heat the olive oil in a saucepan, and saute the onions and garlic for 1-2 mins until softened 

    • Add the finely chopped mixed veggies and red lentils and cook for 5 mins
    • Add the portion of My Veggie Bubba's Creamy Red Lentil & Hidden Veggie Sauce along with 1 tsp of mixed herbs, mix and let it simmer for 10 mins until the veggies are soft. After 10 minutes, turn the heat down and add 1-2 tbsps of cottage cheese or plant-based cream cheese (optional)
    • Peel, chop and boil the potatoes. Mash the potatoes with oat milk until creamy (add butter optional)
    • Place the veggies in an oven tray, and top with the mashed potato and cheese (optional)
    • Cook in a preheated oven at 200 degrees for 15 mins.
