Heat the olive oil in a saucepan, and saute the onions and garlic for 1-2 mins until softened
- Add the finely chopped mixed veggies and red lentils and cook for 5 mins
- Add the portion of My Veggie Bubba's Creamy Red Lentil & Hidden Veggie Sauce along with 1 tsp of mixed herbs, mix and let it simmer for 10 mins until the veggies are soft. After 10 minutes, turn the heat down and add 1-2 tbsps of cottage cheese or plant-based cream cheese (optional)
- Peel, chop and boil the potatoes. Mash the potatoes with oat milk until creamy (add butter optional)
- Place the veggies in an oven tray, and top with the mashed potato and cheese (optional)
- Cook in a preheated oven at 200 degrees for 15 mins.
