Pancakes are one of the most versatile dishes. The sweetness of the plantain and carrot means these pancakes do not need any additional sugar. The carrots help with eye health and are naturally sweet. These are perfect as a snack or as a delicious breakfast! Suitable from 8 months.

Plantain and Carrot Pancake Family Recipe by My Veggie Bubba | Mum Made Healthy Toddler Meals
  • Plantain

  • Carrot

  • Oats

  • Vanilla

  • Cinnamon

  • Milk Alternative

  • Chia/flax seeds

  • 1 Ripe Plantain peeled and chopped

  • 1 Medium Carrot peeled and chopped

  • ½ cup Oats

  • 1 tsp Vanilla (essence or gel)

  • 1-2 tsp Cinnamon

  • 3-4 tbsp flour (whole wheat)

  • 30ml Milk (add more if needed)

  • 1 chia/flaxseed egg

    • Boil the Plantain and the Carrots until soft enough to puree

    • Puree/blend the plantain and carrots together

    • To the mixture add in the oats, cinnamon, vanilla, chia/flaxseed egg and milk.

    • Mix well until the batter is runny

    • Heat up ½ tbsp coconut oil in a pan and add 1 large tbsp if batter.

    • Cook evenly on both sides.
