Gooey Protein Cookies

  • Chickpea tin 
  • Peanut butter
  • Maple syrup/ honey
  • Baking powder
  • Baking soda
  • Vanilla essence
  • Chocolate chips (optional)
Ingredients
  • 1 small tin (140g) Chickpea tin 
  • 1 heaped tbsp Peanut butter
  • 1 tbsp Maple syrup/ honey
  • 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1 tsp Vanilla essence
  • Chocolate Chips (optional)
      Method
      • Drain and wash the chickpeas, and place into a food processor

      • Add the peanut butter and maple syrup/honey and blend until smooth 
      • Next add the vanilla essence, baking soda and baking powder and blend for a few seconds (to ensure the cookies stay fluffy)
      • Empty the mixture into a mixing bowl and add the chocolate chip, mix well. 
      • Spoon onto a baking tray and cook in the oven for 10 mins at 180 degrees. Allow the cookies to cool down, enjoy!
