Drain and wash the chickpeas, and place into a food processor
- Add the peanut butter and maple syrup/honey and blend until smooth
- Next add the vanilla essence, baking soda and baking powder and blend for a few seconds (to ensure the cookies stay fluffy)
- Empty the mixture into a mixing bowl and add the chocolate chip, mix well.
- Spoon onto a baking tray and cook in the oven for 10 mins at 180 degrees. Allow the cookies to cool down, enjoy!
