Steam the betroot for approx 15-20mins and then puree it
- Add the pureed beetroot, oats, seed powder, peanut butter and syrup (optional) into a mixing bowl
- Mix together until a sticky dough forms- (you may need to add more beetroot puree/water if the dough is too dry, if too wet add more oats).
- Roll into balls - (to make into cookies- place the balls onto a baking tray, press each ball down with a fork and cook for 8 mins at 200 degrees)
- Drizzle with melted chocolate
- Store in the fridge.
